The vessels one use for cooking is important and food is rarely cooked with the right vessels today.

GRANITE POTS

Granite pots or kal chatti (stone pot) is THE BEST

CLAY POTS

Clay pots or Kalam is THE SECOND BEST for cooking any kind of food.

OTHER VESSELS

Vessels made of iron and cooking grade stainless steel can also be used. It is best is you use clay and granite pots as food cooked in stays fresh for a long period.

There are also pots made of other metals but foods with different tastes cause specific reaction. So it is generally best to use granite and clay pots rather than going for specific metal pots.

Here is a description which was found on a google group forum by Chinu. I am copy pasting it.

Utensils of the yester years.

Our homes had many kitchen utensils that are no more used at home. But I could see the glimpseof some of these in use   in our cosuisn sisters kalkad house which is over 300 years old . I was privileged have discussion with them on the use of these utensils
Kalam [ claypot]. They were used for making kashayam[ Ayurvedic decoction], storing curd, butter milk etc. They had to be seasoned before the initial use to prevent cracking.
Kalchatti [ pot made of soap-stone]They were used for cooking curries, storing pazhayassadham [ the rice left over after supper]. This rice was soaked in water.The same was eaten the next day morning combining with curd. They too had to be seasoned before the initial use to prevent cracking.
The seasoning was called mayakkal.
Bharani [ glazed clay-pots]. These were used for storing kadumangai, pickles, uppu managai [mangoes in brine], curd, buttermilk, seeded tamarind, etc.
Arikkinchatti [ a vessel made of copper or brass]. This had to be tin-coated before initial use and once in 6 months to prevent the contamination with copper.This was used to water the cows, to destine the rice[arishi arickal/kazhuval].A circular and shallow vessel made of brass called tharppanavattai was used in combination to destone the rice.Small amount of rice was put into the tharppanavattai .Then dipped into the water filled in the arikkinchatti and swirled ;then lifted out of it. Doing thus the light rice goes into the arikkinchatti and the heavier stones remained in the tharppanavattai. The cooked rice was decanted into the arikkinchatti. Adavalagai, a semicircular wooden board was used to decant the cooked rice.

Uruli is a circular and shallow vessel made of bell-metal. This was used to cook payasam, chakkavaratti[ jackfruit jam],boiling milk for making Mysore pakku[ a sweet made of milk and sugar] etc.
Sevanazhi [ a kind of ricer]. This has deep hollow and at the bottom perforations. The dough is put into the hollow and pressed.The dough thus pressed escapes through the tiny holes in thread shape. This is called sevai.This is then steamed.
Appa karol. This is a frying pan which has cups like a muffin-pan.This is used for cooking neyyappam and morappam.The pan has three or four cups. The batter is poured into the cups containing boiling oil.
Attukal is a wet-grinder made of granite. It has a stationary thick slab with a bowl in the middle.The rolling stone [kozhavi] is rolled in the bowl. This is used for grinding batter, gravy for curries etc. The tender jackfruit for edichakka thoran was pounded in attukal.

Ammikkal is a dry grinder.it is used to grind red-chillies, thukayal [chutney], to crush ginger, curry leaves and green chillies for making sambaram [ a drink made of buttermilk].
Kunthani is a mortar embedded in the floor to pound rice and red chillies.
Ural and Ulacka [ Mortar and pestle]. These were made of wood . Rice, veppilakkatti[ an appetizer made combining curry leaves, vadakappulynarangayila [wild lemon tree leaves],perunkayam[asofaetida],salt,red chllies], to pound rice, to prepare avil [rice-flakes]
Kindi is a jug made of brass with a long spout .This was used for washing feet, and in toilets.
Kappikindi { the kettle] this was used to boil water to prepare coffee and tea.
Valpalakai [ an oval wooden slab with a handle].This was for the priests and others to sit on ceremonial occasions. This was also utilized for destoning mustard. A vattamuram [ a bamboo tray] was used in combination. The valpalakai was held at an acute angle and the mustard was put on it. It rolled down into the vattamuram and the stones remained atop.
Venkalappanai [ a vessel made of bell-metal]. This was used for cooking rice.
Thondi/kutam[ is a vessel which flares towards the middle, made of copper or brass]. This was used to draw water from the well and to fetch water.
Vattamuram[ bamboo tray] This was used to toss rice, lentil [ toor and urid dal], red chillies etc. The unwanted things from them were thus removed.

WHAT VESSELS SHOULD NOT BE USED

(1) NON-STICK VESSELS/ TEFLON COATED

They are made of plastic which means you are eating plastic.

(2) ALUMINIUM VESSELS

Sour taste reacts with aluminium.

(3) COPPER

Copper pots can be used but it should be coated with tin.

CUTTING BOARDS
One can use big plates as a cutting board or a flat marble

KNIVES

Traditionally iron knives were used. You can also use steel ones.

SIEVES

Plastic sieves should not be used to sieve hot tea only steel sieves should be used.

SERVING VESSELS
Steel, glass can be used for serving. PLASTIC BOWLS, melamine plates should not be used.

GLASS
No plastic glass, melamine glass should be used.

FLASKs or WATER JARS
Never use plastic ones.

TIFFIN or LUNCH BOXES

Never use plastic ones.

Wrong Food Combinations

As with everything else food is being played with now a days. The more money you have the more one plays with food. Remember buffets and many course meals. This is the height of stupidity. Nothing more nothing less. See, every single item of food like for eg. a carrot or banana is a COMPLETE FOOD IN ITSELF. Nature has made it that way, You need not add your stupidity to make less complete.

RULE NO 1

Every single food item is best taken alone. It makes digestion easier. If you are eating bread it is best to eat it alone.

RULE NO 2

Now COMBINING FOOD IS A SCIENCE and you need not add your nonsense to it. It is this rule that is mercilessly violated today.

RULE NO 3

Never drink water or liquids together with meals. Digestion enhancing substances like wine should be used in less quantities and no more. Water should be drunk one to one and a half hour before meals. Again water should be drunk two to two and a half hours after meals.

EATING FOOD IS A SACRED RITUAL AND A SERIOUS BUSINESS. DAY BY DAY, YEAR BY YEAR UNTIL YOUR DYING DAY IT SHOULD BE CARRIED OUT SERIOUSLY AND REGULARLY. IF YOU MESS WITH YOUR FOOD YOU MESS WITH YOUR LIFE. MIND IT!

COMBINING FOOD

Proteins (best eaten separately)   (pulses) best with Veggies. Nuts can be had separately.

Our daily protein requirement is 1 gram per kg of body weight. 50 kilo person should consume 50 grams of protein daily.

Carbohydrates    best with veggies. with fats ok.

Vegetables either separately or with carbohydrates or proteins.

Fruits are best eaten separately. Dont combine different fruits in a meal.

Now lets look at it in a practical way.

(1) Of all the food milk has the most antagonisms. So milk is best drunk separately and BEFORE 3 HOURS BEFORE BED.

(2) Salads or raw veggies should not be eaten with cooked food.

(3) Never combine meat with carbs like wheat and rice.

(4) A good digestion ends in one and a half to two hours time. If it takes more than that something is wrong.

Food combining is a science and is too exhaustive to be mentioned here. Know that if your digestion takes more than 2 hours to complete then you have combined your food wrongly or due to other reasons.

Purifying your Water

It is important for your heath that the water you drink should be clean. In this post we will look at some of the ways by which water can be purified.

(1) the THREE POT METHOD

Three pots must be kept on top of each other. In the above two pots make a hole of one inch and should be covered with grass on both pots. The upper pot must be filled with sand; the middle one with charcoal; and the bottom third one to collect the purified water.

(2) Storing water in COPPER POTS

You can store water in copper pots. Copper post must be regularly with sour thing like tamarind paste or lemon with salt.

(3) Exposing water to SUNLIGHT

Expose water to sunlight by pouring water from one container to another in front of sunlight couple of times.

(4) RAIN WATER

Rain water is the purest form of water and should be drunk on monsoons.

(5) BOILING WATER

The methods i have given here are some simple methods you can use there are many other region specific methods as well.

HOW TO KNOW IF YOUR WATER IS PURE AND SAFE

Hold it over water. If it turns clockwise it is pure and good to drink. If it turns anti clockwise it is good as SHIT. Try it on artificial drinks the you can know how your brands care for you by giving you poisons to drink.

Incompatible Foods – 5

In nature creatures live healthy because they eat the right food and don’t have many choices. When it comes to man taking pride in civilization even if you give him shit decorated he will happily eat it without any qualms.

Now, look how the stupid man gets his food.

Because man’s intelligence blossomed in the wrong way his senses which should have been his tool to identify food went into disuse. Hence we can see now people mix mashing their food according to their stupidity. In case if you consume incompatible foods it will affect your dhatus/ tissues and cause problems not only for you but for your unborn children as well.

It is said that it is best to consume one food item in a meal as it is simple for the brain to do what is needed. If you consume three or more items, it will be CONFUSING FOR THE BRAIN and DIGESTION SLOWS and CAUSES ILLNESS. First Lets look at the Principles involved in identifying incompatible food.

PRINCIPLES OF INCOMPATIBILITY

(1) Food having opposing qualities.

Food is divided into ones having hot potency/ ushna virya and cold potency / shita virya/ When you mix them together it becomes incompatible. Opposing food is eaten only in special cases. Eg. meat with ice cream.

(2) Food having similar qualities.

When similar quality food is eaten it increases a particular dosha and becomes incompatible. Eg. fish with radish.

(3) Food with Opposing multiple qualities

If food with multiple qualities is taken it is incompatible. Eg. consuming equal quantities of honey and ghee.

(4) Incompatibility in processing

In the process of food processing/ cooking its original quality changes and is not recommended. Eg. heating honey and curd.

(5) Incompatibility in Time of Intake

A day according to ayurveda is divided into three. Kapha time (6 AM to 10 AM, 6 PM to 10 PM); Pitta time ( 10 AM to 2 PM, 10 PM to 2 AM); Vata time (2 PM to 6 PM, 2 AM to 6 AM). Now the problem is when you eat food having similar quality of a dosha at the dosha time. Eg. eating kapha food at kapha time is incompatible. Eating curds or sweets at night.

WHO WILL NOT BE AFFECTED BY INCOMPATIBLE FOODS

People who are young, strong, have good digestive power; people who are used to taking such food in small quantities for a long time.

Now, Ayurveda says about 18 types of INCOMPATIBILITY and i dont think they teach this at FOOD SCIENCE COURSES.

INCOMPATIBLE FOOD COMBINATION / VIRUDDHA AHAR

(1) Desha Viruddha/ Region Incompatible

Taking dry substances in desert areas, eating high fatty food in cold areas and so on. That food should only  be eaten which is found there. In my previous post i mentioned food within a radius which can be covered by foot in a day.

(2) Kala Viruddha/ Time and season incompatibility

Means eating wrong food at the wrong season or during the day. Eg. eating cold food at night.

(3) Agni Viruddha/ Digestive power incompatiblity

Eating heave food when you have less digestive power. Eating less food when you have more power and so on.

(4) Matra Viruddha/ Food taken in wrong quantities

Intake of ghee and honey in equal quantities.

(5) Satmya Viruddha/ habituation incompatibility

A person eating spicy food who is habitually used to sweet food. In present world people trying new foods. Today eating beef, tomorrow salads, and fish, the day after.

(6) Dosha Viruddha/ Against your body constitution

A kapha person eating kapha food.

(7) Samskara Viruddha/ Preparation related incompatibility

Sour food cooked in aluminium vessel and so on. It becomes poisonous.

(8) Veerya Viruddha/ Food potency incompatibility

Eating hot and cold potency food together. Eating ice creams after biriyani.

(9) Koshta Viruddha/ Bowel movement specific incompatibility

Purgative of small dose given to a constipated person and so on.

(10) Krama Viruddha/ Eating Order specific incompatibility

eating before going to toilet, eating when he does not have hunger, drinking water immediately before and after meals.

(11) Parihaar Viruddha/ Prescription specific incompatibility

Consumption of those substances which are against things which relieve the symptoms. Drinking water immediately after consuming tea and so on.

(12) Avastha Viruddha/ Stage specific incompatibility

Consumption of food against your body’s condition. Eating vata (gas forming) good after sex and so on.

(13) Upachara Viruddha/ Treatment specific incompatibility

Eating cold food after taking ghee and so on.

(14) Paka Viruddha ( Cooking related incompatibility)

Under cooking, over cooking, using wrong fuel, using wrong method like microwave.

(15) Samyoga Viruddha (Combination incompatibility

Taking sour substances with milk.

(16) Hrudaya Viruddha/ Palatibility or distaste incompatibility

(17) Sampat Viruddha/ Richness of quality

Eating things which are not having their proper qualitities. Eating food thatis under mature, over mature, rotten and so on.

(18) Vidhi Viruddha/ Against rules of eating

eating food in public spaces and so on.

HOW TO CHANGE TO A RIGHT DIET

It is very common to find people eating incompatible foods and if they want to change to a right diet please observe the following. Changing to the right way of eating should be done very slowly. Eating right once a week, then twice a week and so on. If you jump into new ways body will reject it. So take your time and make the shift.

Types of Food – 4

This post lists the whole range of food one can eat according to ayurveda. First, let us see how food is classified:

  1. Three Gunas : Sattwa, Rajas, Tamas
  2. Three Doshas : Vata, Pitta, Kapha
  3. Five Elements : Akasa/ether, Vayu/ Air, Fire, Water, Earth
  4. Six Tastes :

Sweet        water + earth
Sour          water + fire
Salty          earth + fire
Pungent     fire + air
Bitter          air + ether
Astringent  air + earth

THE TYPES OF FOOD AND DRINKS

(1) Fruits

(2) Vegetables

(3) Nuts

(4) Grains with husk

(5) Greens

(6) Meats and animal products like eggs (not recommended)

(7) Fermented Drink

(8) Water

(9) Milk and milk products

(10) Sugarcane products

(11) Pulses

COOKED FOOD AND SPICES form a separate category. In Nature only Man cooks his food. Spices is not food as it a taste and digestion enhancer.

RAW FOOD Vs COOKED FOOD

Now there a lot of debate about whether to eat raw food or cooked food. Lets put an end to the FUCKING DEBATE.

There can only be two perspectives on cooked food and no more. First is the Natural or Yogic perspective and Second, Ayurvedic or from a ill persons perspective.

From the Natural or yogic perspective cooked food is unnatural. In the natural no creature cooks food and they are STRONG AS A STONE. Forest dwelling Yogis typically Kanda Mool Phala (veggies growing under and above ground, fruits  and nuts). Society dwelling or Grihasta Yogis include cooked food as well. This type of raw food is ideal for HEALTHY PEOPLE. In this form of eating raw food, it is cooked in the stomach and required effort which of course the Rishis have. You might also have heard of people asking Rishis to father children. This shows their strength. No real yogi worth his salt unless living in family situation will ever eat cooked food.

But Ayurveda is from the perspective of patients or sick people. Since sick people lack the capability to digest food they are advised COOKED FOOD which is COOKING THE FOOD OUTSIDE THE STOMACH. This food is easily digested with the necessary nutrients.

Now, what is the middle position. You should include raw food in your diet. Eat at least one meal consisting only of fruits or vegetables. When using raw vegetables it is good squeeze half a lemon juice in it to enhance digestion.

IMPORTANT: NOW WHATEVER FOOD WHICH IS COMMERCIALLY AVAILABLE IS NOT PURE AND IS POISONOUS. My suggestion is that people having sufficient land should cultivate whatever they need and also keep desi humped cows, goats and so on. In cities groups of people can purchase a land for common cultivation.

Power of your Food – 3

According to the LOCATION OF FOOD, it is divided into three categories: Earth Food, Ground Food and Sun Food.

LOCATION OF FOOD

(1) Earth Food

  • Food growing below the ground. These foods are healing and cleansing in nature. Eg. beetroot, carrot.

(2) Ground Food

  • Food growing from the ground to about 3 feet gives strength. Eg. grains

(3) Sun Food

Sun food is of two categories

  • food growing 3 feet above the ground to 11 feet. it gives nourishment. Eg. fruits.
  • Food growing above 11 feet gives instant energy. Eg. tender coconut juice.

NATURE OF FOOD

According to the NATURE or GUNA OF FOOD It is classifies into Sattvic, Rajasic, and Tamasic

(1) Sattvic

Satvic food is that which has lots of POSITIVE PRANA. It helps in keeping brahmacharya and is beneficial for meditation as it does not disturbs the mind. Eg. fruits, grains, nuts, cooked food with less spices and so on. It increases Sattva and is therefore helpful in knowing your true nature which manifests and UNCONDITIONAL or ALL EMBRACING LOVE. Remember what Jesus said: “but whosoever shall smite thee on thy right cheek, turn to him the other also.” This what sattwa means. Imagine that you are a mother and nursing your child on your lap. What if your child slaps you, would you slap him back? You wouldn’t, right! Why because its your child; the child is part of yourself and you are responsible for him. So, because of your overflowing love for your child, you would turn your other cheek. This is the play of love and no EGO is involved. This is Sattwa.

(2) Rajasic

Rajasic Food is that which propels you to be active. This kind of food has NEGATIVE PRANA and is stimulating in nature. People in the path of brahmacharya dont eat rajasic food. Eg. Onion, Garlic, brinjal / eggplant, chillies, tea, coffee, drugs and so on. All the tastes except Sweet are rajasic.

(3) Tamasic

Tamasic food is that which makes us dull and lazy. It contains ZERO PRANA and is good as SHIT. Eg. Previous days food, Frozen food, old meat, Re-cooked food, Packet Foods (biscuits etc), bottled drinks. These food have the effect of POISON on the body and cause diseases.

QUALITIES OF FOOD TO BE EATEN

(1) Whole Food

Whole food means in its natural state. Eg. rice, wheat, pulses / lentils with its husks. If it is eaten unhusked/ without the covering it damages the organs. I see that people peel the skin of apples and then eat. It is not good.

(2) Fresh Food

fresh food means food that is fresh not stale or old. It also means food without pesticides and other shelf life promoting things. In other words ORGANIC FOOD. Previous days leftovers should not be used. Ayurveda says that cooked food should be eaten within 45 minutes of cooking after that bacterial infection/ food decomposition starts.

(3) Locally sourced

In ayurveda they say that (wo)man should eat only those food that grows within a radius that can be covered by walking in a day. But in this highly praised globalised world this rule is broken. Like the song in the hindi movie Shree 420: mera jhoota hai japani; we pride in our spices from italy, fruits from china and WHAT SHIT FROM WHERENOT. Please avoid this eat locally sourced food only.

(4) MICROWAVED AND GENETICALLY ENGINEERED FOOD

Microwaving is an artificial way of heating food. This along with electric stove/ coffee makers should be avoided. Fire from firewood is best. Second best is gas stove. The rest are not good and is best avoided. Now research is done on genetically engineered (GM food) food to increase shelf life and other properties. GMO Genetically Modified Organisms is equally worse. It is like playing god. If you cannot be humans properly then how can you play god. It is playing with fire. THIS IS AGAINST NATURE AND IT CAN NEVER BE GOOD FOR YOU.

(5) PROCESSED and PACKAGED FOOD

All processed and packaged food should be avoided. Processed food causes constipation and is done to increase shelf life. See everything has a life span isn’t it after that it will begin to decay. So avoid it.

(6) CHEMICALS IN FOOD

Nowadays food is accompanied by chemicals even right before planting. Artificial fertilizers, hormone injected animals and birds, herbicides and pesticides are used liberally. This is clear inorganic food and brings toxins into the body. Hormones are used to grow animals for meat quickly; if we eat it our cell division increases. You might have noticed that puberty is now starting very early and the the rise of child sex and pedophilia. It means are becoming sexually mature fast hence rise in sex with or involving children.

(7) REFINED FOOD

Here the natural nature of food is manipulated to improve its appearance, texture and taste. This is called REFINING FOOD, after this NOTHING NATURAL REMAINS. Removing brain and husk of grains, using crystal sugar, all your chocolates, cookies, biscuits, sweets made of refined crystal sugar and every other thing now available and will be made available by bastard men.

(8) FROZEN FOOD

Fozen food and cooking it is WORSE THAN SHIT. Your refrigerators are not good.

(9) CHEMICALLY PRESERVED FOOD

Take any packaged food and read its ingredients, you will find preservatives used in it to increase shelf life. This is poisonous.

(10) FERMENTED FOODS

Now fermentation has become a fashion. This type of food is good as shit. The more old it is the more shitty. And people are spending lots of money buying shit.

(11) FRIED FOOD

This is another example of shitty food.

(12) FOOD ADDITIVES, FLAVORINGS AND COLORINGS

Avoid food having these. Most of the restaurants use these in their food.

(13) SUGARY/ SWEETENED AND SALTY FOOD

Food having refined crystal sugar and refined salts should be avoided. This type of food is commonly seen now. Sweets made of jaggery and natural ingredients is best and Rock salt is best, second comes sea salt. Crystal iodised refined powdery salt IS PURE POISON.

(14) SPICY/ HOT FOOD

Spicy food heats up your blood and weaken semen in moth men and women and is weakening. Red chilli powder is the worst and nowadays chemically made spicy stuff is used instead of chillies. It is poisonous.

(15) CARBONATED FOOD

Carbonated beverages is high fashion nowadays. This is bad for the body.

(16) STALE and NOT FRESH FOOD

Nowadays people have started eating previous days leftovers mostly kept in fridge. This food is good as SHIT.

(17) PRESSURE COOKED FOOD

Food prepared using pressure cooker is good as shit. Ayurveda says that anything cooked above 100 degree celsius is SHIT. So your pressure cooked rice and other other thing is shit. MAHAPRASA OF JAGANATH PURI is COOKED IN CLAY POTS. See, GODS EATS POT COKED FOOD and FOOLS EAT PRESSURE COOKED FOOD.

Medicined prepared in boilers is also good as SHIT. Most of Ayurvedic medicines are made using boilers whose temperature goes above 100 degrees.

(19) HEATING ALREADY COOKED FOOD

This now commonly seen, heating an already cooked food. This should not be done as it is poisonous.

(20) INCOMPATIBLE FOOD OR VIRUDHAHAR

Identifying your Food – 2

If you look at all the creatures on the planet they rely on five senses to identify their food. Man is derived from the sanskrit root ‘manyate’–to think, contemplate, concentrate. Man in sanskrit is manushya or manav. Man during his hunter-gatherer phase he exclusively relied on his five senses to identify his food but after settling down he created civilization. I personally think animals are more civilized than man but man has potential to be. With the development of civilization his senses went into disuse as a result of too much thinking. Hence he is not able to identify his food.If you decorate shit and give him, he will eat it.

Now, OPEN YOUR EARS WIDE AND LISTEN.

The order of using senses in identifying your food. The order is with regard to wo(man) and it varies according to creatures.

(1) SEEING

Yes, Sight! Food should appeal to you. Its colour, size etc. If you like your food on first sight then its good for you. This sense needs to be sharpened now. As i said before, if you decorate shit and give man will eat it.

(2) TOUCHING

Man touches his food and feels the texture. This determines whether he can eat it or not.

I would like to add my theory (MOUTH–HAND THEORY or FOOD–CREATURE THEORY) here. See every creature uses its mouth to eat food. Some take food in with their beaks and some with their hands. So food is related to the size of the mouth as well as the dimensions of the creatures palms. For eg. grains are originally designed for bird due to the size of their beaks. Man got used to it and is not his main food because the size of grain and palms/ mouth don’t match.

(3) SMELLING

Man then smells the food; if he is satisfied with the smell it is good to eat but after tasting.

(4) TASTE

After all the four conditions are satisfied man tastes his food. Taste is the final determinant. If he is satisfied with the taste then HE CAN PROCEED TO EAT.

(5) HEARING

Hearing should have come second in the order but because of being civilized he rarely uses it. But if man is in state of nature this sense definitely comes second.

As in the post of exercise where according to you one should exercise all the muscles once daily, (wo)man should EXERCISE ALL THE SENSES. Do you see the aesthetics and necessity of identifying your food SENSUALLY rather than ORDERING OVER THE COUNTER.

IMPORTANT: Daily exercise your senses to identify food.
